HOW IT ALL BEGAN
As a passionate “foodie,” Claudia’s love of fine food and creative menu design is something she has savored since childhood. Her passion paired with her determination led Claudia to achieve honors and graduate as valedictorian from the New York Restaurant School where she was trained in culinary technique and restaurant management. After completing her training she went on to become Sous Chef at Glorious Food- NY/Washington DC, where she gained invaluable experience in exclusive menu design and exquisite plate presentation.
Broadening her career, she held positions as Executive Chef and Food Marketing Consultant at caterers, grocery and specialty venues. Her food writing included pairing wine and food and features containing recipes, menu inspiration, product suggestions and trend spotting. Finding herself in food markets throughout the United States & Europe, Claudia realized that her favorite dessert, dried fruit paired with chocolate and the French chocolate “mendiant” were not readily available at retail. She felt the time was ripe to share this divine dessert, so she went straight to work creating her brand, one that embodies the Frankie’s spirit, retro style, and European inspiration.
